Use the Chicken for Chimichangas and Fajitas

Chicken is such a versatile meat. It is healthier than other meats especially when lean and skinless. Although some people would tell you that it's not as tasty as other meats. What better way to enhance the flavor of your chicken than to cook it Mexican style? Mexican cuisine is tasty and flavorful, a fusion of the best of Spanish and Mayan with a sprinkling of other small influences from the French, the Caribbean and indigenous Mexico. Mexican dishes are delicious and colorful. Chicken would be more appetizing especially when combined with Mexican flavors.

Here are two recipes that you can use to make Mexican Chicken dishes. A chimichanga originated in Sonora, in Mexico and is a burrito that is also deep fried or baked. Chicken chimichangas make use of chicken as the main ingredient in the dish. Use shredded chicken and combine it with cumin, picante sauce, salt, onion and oregano. Cook this mixture for 25 minutes in a Dutch oven and make sure most of the liquid remaining in it has evaporated. Spoon some of this mixture onto a tortilla and add cheese. Fold it so that it makes a rectangle and use a toothpick to secure it. Grease a baking sheet and coat vegetable cooking spray on the tortillas. Bake the tortillas for 8 to 10 minutes and turn them over to bake them for another 5 minutes.

Another way to prepare your chicken Mexican style is to make chicken fajitas. Cook chicken strips together with garlic, onion and red bell peppers. Make sure the chicken strips are no longer pink before draining it. To make the sauce, heat cooking wine with lime juice, tomato sauce, chili powder and cumin in the pan and heat it for not more than 3 minutes. Remove the sauce from heat. Serve the chicken mixture on a flour tortilla, add the sauce over it, slather some avocado and sour cream on it. Top with a helping of refried beans and roll it up.
