Recipes: Nothing Says Mexican the way Tacos can


Have you noticed that the most common Mexican delicacies are made from corn? There's the tortilla wrap, the tortilla chip and the nachos. Another great Mexican delicacy that is made from the tortilla is the taco. Take a mixture of edibles or a salad and put it in a folded tortilla that has been fried and seasoned. A taco has several variants: flauta or soft taco, taquito or a cylinder filled soft taco that has been deep fried and the taco dorada or the fried taco that is filled with fresh and tasty ingredients. A person who prepares tacos in a taco stand is called a called a taquero. The grill used in a taco stand is called an asador. Other versions of the taco include the quesadilla, the open faced taco and the de cabeza.

Even if you are not a taquero and you don't have the asador that is used by professional taco stands, you can still make scrumptious tacos in the privacy and comfort of your own kitchen. Here is a recipe that you can use in your quest to make the perfect taco. With this carne asado taco recipe, it is advisable to make everything from scratch. So let's start with the beef, place a flank steak in a baking dish or large bowl. For the marinade, you need to whisk soy sauce, lime juice, vinegar, cloves of garlic and olive oil in a bowl. Add dashes of black pepper, garlic powder, oregano, paprika, salt, white pepper, chili powder and cumin to season it. Pour this mixture over the steak and baste it well. Make sure that this meat is marinated for at least 8 hours before using it.

When you're ready to cook the beef, cut the flank steak into strips and cook it in vegetable oil heated in a large skillet. Cook until the meat is both tender and crispy. Set the meat aside. Toast some chili pods in another skillet and then place them in a bowl of water. Soak the pods for at least 30 minutes while you bake an onion, cloves of garlic, tomatoes and jalapeños in a an oven preheated to 450 degrees Fahrenheit. Bake it for 20 minutes and then place these roasted vegetables in a food processor together with the soaked chili pods. Make a smooth puree out of this mixture. For the relish, you only need to combine cilantro, lime juice and a chopped onion in a small bowl.

Warm the tortillas and place them on a plate. Spoon hefty servings of the beef on them and spread some salsa and relish over the beef. Add cheese and serve them open faced as a traditional taquero would.
