Beans are nutritious and tasty, they have many variants that can be used for different dishes. Frijol pinto are pinto beans cooked in several ways. You can boil and mash the beans and eat them that way, you can also refry them or cook them in a tasty broth. Frijoles negros are black beans that can also be prepared in a soup or baked. Mexican Bean Salad
This salad can be served as a side dish or as a filling dinner. It is healthy as well as colorful and anyone who loves beans will enjoy this salad. The recipe calls for a combination of cannellini beans, black beans and kidney beans. Mix green and red belle peppers with red onions, the three kinds of beans and fresh corn kernels in one bowl. In another bowl, use a whisk to mix olive oil, lime juice, sugar, garlic, cumin, red wine vinegar, lemon juice, salt, cilantro and some black pepper. If you want some heat, add some chili powder or dashes of hot sauce. Pour this dressing over the bean salad and toss well. Chill and serve cold.
Five Bean Salad
If you prefer your salad hot and want some meat and more kinds of beans in your dish, then this recipe is for you. You can choose five of your preferred kinds of beans and incorporate them into this recipe. Cook cut up bacon strips until they turn brown and drain them. Leave some of the drippings in the skillet, add some sugar, salt, cornstarch and pepper and mix it with the hot drippings. Add some water and a little vinegar. Bring this mixture to a boil and then add black beans, green beans, lima beans, kidney beans and wax beans into the broth. Cover it and allow the broth to simmer. Stir from time to time until the beans are cooked. Serve this in a large dish and put crumbled bacon on top of it.
