Recipes: Desserts the Mexican Way


Dessert is an integral part of a complete meal. It somehow ties up the meal you' just had with a sweet or fruity tasting dish. After all there's always room for dessert. Mexican cuisine is not particularly known for its desserts. You think Mexican and you envision rich dishes such as burritos and quesadillas and enchiladas. But Mexico has its own share of great tasting desserts that you should try. Chocolate actually originated from Mexico. This alone should tell you how delectable Mexican desserts are. One of the more known desserts that can be attributed to the Mexicans is “churros con chocolate”.

Here are some recipes with the authentic Mexican touch that you can prepare in the comfort of your own kitchen. Turtle chimichangas use chocolate, ice cream and flour tortillas to make a crepe like dessert. Its so easy to make that you can ask your children to help make this dessert, except for the frying part. You need to wrap a chocolate bar in the center of a tortilla and fold it. Fry the chocolate chimichangas in hot oil for 2 minutes and drain it on a wire rack. Heat some caramel sauce and add pecans when its boiling. Stir the caramel sauce so that the pecans wouldn't stick together. Place a chimichanga on a plate and drizzle caramel pecan sauce and hot fudge on top of it. Place a scoop of ice cream on top of it, this will make it look like a turtle.

Tres leches is a milk cake made with four different types of milk. It's a wonderful treat for everyone who likes good cake and loves milk. To make this cake, sift some baking powder and a bit of flour and set it aside. Mix butter and sugar together until creamy and add some vanilla and eggs. Beat this mixture well. Stir in the flour and baking powder mixture into this butter mixture and blend really well. When thoroughly incorporated, pour the batter into a cake pan. Bake this cake into an oven preheated to 350 degrees Fahrenheit for 30 minutes. Take the cake out when it is cooled. In a bowl, mix evaporated milk, condensed milk and while milk. Pour this milk mixture on top of the cake. Whip cream, sugar and vanilla until thick and then spread it on top of the cake. Keep this cake refrigerated until ready to serve.
